🥣 Green Cleansing Soup

Ingredients:

  • 1 tbsp olive oil or avocado oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 celery stalks, sliced
  • 1 zucchini, chopped
  • 1 cup broccoli florets
  • 1 handful spinach or kale
  • 4 cups vegetable broth
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste
  • Optional: fresh parsley, turmeric, or ginger for extra cleansing boost

Instructions:

  1. In a pot, heat oil over medium heat. Sauté onion and garlic until soft.
  2. Add celery, zucchini, and broccoli. Stir and cook for 5 minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10–15 minutes.
  4. Add spinach or kale and cook until wilted (2–3 minutes).
  5. Turn off heat, add lemon juice, and season with salt and pepper.
  6. Blend the soup (optional) for a smooth, creamy texture.
