🥣 Green Cleansing Soup
Ingredients:
- 1 tbsp olive oil or avocado oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 celery stalks, sliced
- 1 zucchini, chopped
- 1 cup broccoli florets
- 1 handful spinach or kale
- 4 cups vegetable broth
- 1 tbsp fresh lemon juice
- Salt and pepper to taste
- Optional: fresh parsley, turmeric, or ginger for extra cleansing boost
Instructions:
- In a pot, heat oil over medium heat. Sauté onion and garlic until soft.
- Add celery, zucchini, and broccoli. Stir and cook for 5 minutes.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10–15 minutes.
- Add spinach or kale and cook until wilted (2–3 minutes).
- Turn off heat, add lemon juice, and season with salt and pepper.
- Blend the soup (optional) for a smooth, creamy texture.
