🥦 Green Cleansing Soup
✅ Ingredients:
- 1 tbsp olive oil
- 1 leek or onion, sliced
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 cups broccoli florets
- 2 zucchinis, chopped
- 2 celery stalks, sliced
- 1 cup kale or spinach
- 4 cups vegetable broth
- Juice of 1 lemon
- Salt and pepper to taste
- Optional: parsley or hemp seeds for garnish
✅ Instructions:
- Heat olive oil in a large pot over medium heat.
- Sauté leek (or onion), garlic, and ginger for 3–4 minutes until fragrant.
- Add broccoli, zucchini, and celery. Cook another 5 minutes.
- Pour in vegetable broth. Simmer for 10–15 minutes until veggies are soft.
- Add kale or spinach. Simmer 2 more minutes until wilted.
- Turn off heat and add lemon juice, salt, and pepper.
- Blend the soup using an immersion blender until smooth (or leave chunky if preferred).
- Garnish with parsley or hemp seeds and serve warm.
