🥬 Chinese Cabbage & Shiitake Soup

Ingredients:

  • 1/2 head Napa cabbage, chopped
  • 1/2 cup shiitake mushrooms, sliced
  • 1 garlic clove, minced
  • 1-inch ginger, sliced
  • 1 tbsp tamari or soy sauce
  • 4 cups vegetable broth
  • 1 tsp sesame oil
  • Green onion for garnish

Instructions:

  1. Sauté garlic and ginger in sesame oil.
  2. Add mushrooms and cabbage. Stir-fry briefly.
  3. Add broth and tamari. Simmer for 15 minutes.
  4. Garnish with green onions.
