Bok Choy & Miso Soup

🧄 Ingredients:

  • 1 tbsp sesame oil
  • 1-inch ginger, grated
  • 2 garlic cloves, minced
  • 2 baby bok choy, halved
  • 1/2 cup tofu, cubed
  • 2 tbsp miso paste
  • 4 cups water
  • 2 green onions, sliced
  • 1 tbsp tamari

🍲 Instructions:

  1. Sauté garlic and ginger in sesame oil.
  2. Add bok choy and tofu, cook briefly.
  3. Add water and simmer 5 mins.
  4. Remove from heat, stir in miso and tamari.
