Vegan Tortilla Soup
🧄 Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 tsp cumin
- 1 tsp chili powder
- 1 can diced tomatoes
- 1 can black beans (drained)
- 4 cups vegetable broth
- Juice of 1 lime
- Salt and pepper to taste
- Crispy tortilla strips for topping
- Chopped avocado and cilantro for garnish
🍲 Instructions:
- Sauté onion, garlic, and bell pepper in oil until soft.
- Add spices, tomatoes, beans, and broth. Simmer 15–20 minutes.
- Stir in lime juice, salt, and pepper.
- Serve topped with tortilla strips, avocado, and cilantro.
