Vegan Tortilla Soup

🧄 Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 can diced tomatoes
  • 1 can black beans (drained)
  • 4 cups vegetable broth
  • Juice of 1 lime
  • Salt and pepper to taste
  • Crispy tortilla strips for topping
  • Chopped avocado and cilantro for garnish

🍲 Instructions:

  1. Sauté onion, garlic, and bell pepper in oil until soft.
  2. Add spices, tomatoes, beans, and broth. Simmer 15–20 minutes.
  3. Stir in lime juice, salt, and pepper.
  4. Serve topped with tortilla strips, avocado, and cilantro.
