🥦 Green Cleansing Soup

✅ Ingredients:

  • 1 tbsp olive oil
  • 1 leek or onion, sliced
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 cups broccoli florets
  • 2 zucchinis, chopped
  • 2 celery stalks, sliced
  • 1 cup kale or spinach
  • 4 cups vegetable broth
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Optional: parsley or hemp seeds for garnish

✅ Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté leek (or onion), garlic, and ginger for 3–4 minutes until fragrant.
  3. Add broccoli, zucchini, and celery. Cook another 5 minutes.
  4. Pour in vegetable broth. Simmer for 10–15 minutes until veggies are soft.
  5. Add kale or spinach. Simmer 2 more minutes until wilted.
  6. Turn off heat and add lemon juice, salt, and pepper.
  7. Blend the soup using an immersion blender until smooth (or leave chunky if preferred).
  8. Garnish with parsley or hemp seeds and serve warm.
